On this day in 2007, the word "adobo" first appeared in the Oxford English Dictionary, and Google Doodle popularized this day in 2023.
Adobo is unofficially the national dish of the Philippines. Adobo-style cooking consists of a marinated meat braised into a stew, usually with vinegar, soy sauce, bay leaves, garlic, and black pepper. The result is laid over a bed of rice and served hot.
